Timezone information stored in files which located in /usr/share/zoneinfo directory.

Timezone which pointed by /etc/localtime link is current time zone. You can use ls to check link value:

ls -l /etc/localtime

To change timezone just update /etc/localtime link:

ln -sf /usr/share/zoneinfo/America/Dawson_Creek /etc/localtime
